The other day I was told how delicious roasted garlic is. I can't remember if I'd actually had straight up roasted garlic. A while back I got a terra cotta garlic roaster. I, once again, shamefully admit that it has gone unused. For like 2 years. *hangs head in shame* So tonight after baking bread and cookies (yes, I was a busy woman) I tossed in a few garlic bulbs.
It's really super hard to do. Ready.. ??
- Remove outer paper to expose individual clove.
- Cut the tops off just enough to expose the flesh of each clove.
- Drizzle olive oil over them (doing this in a separate bowl is easier)
- Add salt and pepper if desired.
- Place on terra cotta roaster, cover.
- Place roaster in 400 degree oven for 45-60 minutes (every oven is different)
- Eat shamelessly on homemade bread with a smidge of butter (homemade butter is also a fantastic choice).
- Hope you don't stink to high heaven tomorrow when your boyfriend gets home from Seattle.
The finished product ... prior to my consuming nearly a whole bulb by myself.
You can also use a muffin tin and tin foil if you don't have a terra cotta garlic roaster. I think that the pound of garlic I got is not going to last as long as I thought it would. ;)
